   Five years ago this coming winter, Matt Holley took over ownership of Mugs Coffeehouse at 307 Watson St.

   Being new to downtown Ripon and the business, Holley pledged early on to make any initial changes subtle.

   “Initially we kept it as it was; we had a good reputation and it was pretty established, so we kept most things the same,” he said.

   But, little by little, the business firmly has become his.

   With in-house coffee roasting — a passion of Holley’s — beer on tap and, as of this summer, kombucha as well, Mugs has continued to redefine itself while staying true to its coffeehouse roots.

   “It keeps it interesting for us. And, from a business standpoint, I never want it to kind of go stale ...,” he said.
